Giveaway Day 31 – Part 1: Foodie Fun – Closed

31 Days of Giveaways

Here we go.  The last day of May.  How did this month go by so quickly?!  If you were one of the original readers of this site then you know that last year I sponsored 31 Days of Giveaways myself, as a way of saying thank-you to those of you that stop by to read this site.  This year I have been extremely fortunate that so many companies and Etsy Shops have wanted to participate that the giveaways sponsored by me were kept to a minimum.  {In fact, so many companies wanted to participate that you’re going to see a large number of giveaways throughout the month of June, by companies that I couldn’t fit into the mix this past month!}

Because I’d had every intention of sponsoring 31 days of giveaways myself, I have many items sitting around that were meant to be individual giveaways.  Since I don’t have 31 days to fill, I figured I would use today to post a couple of giveaways that combine many of the items I have.  {Just an FYI – the vast majority of the items were purchased using the sample sale referral credits I receive from all of you!}

So, without further ado, here is the first giveaway of the day:

That's Strawberry Soup. Forgot to put title.

Ingredients

* 2 cups strawberries
* 1 cup buttermilk
* 1 teaspoon granulated sugar

Directions

1. Place strawberries and buttermilk into a blender or food processor and puree. Sweeten with sugar to taste, blend and either serve immediately or chill in the refrigerator.

Greek Lentil Soup!

Salmon and Veggies
- 1 piece of salmon per person
- 1 bag frozen veggies
- 1 onion
- salt & pepper
- Fresh grated parmensan cheese
- lemon
-EVOO

1. Pan sear the fish on both sides for 1 minute each on high heat with EVOO
2. Throw in the chopped onions and frozen veggies, salt and pepper
3. Cover, reduce to low heat and simmer for 15-20 minutes
4. Remove from heat, add lemon to fish and parmesan to veggies.
5. Done!

This is one of my favorite recipes - year round, not just for the summer. After we've eaten tostadas one night, I use the leftovers to top salads. So good!

Pumpkin Spice Muffins
- 1 box spice cake mix
- 1 can pure pumpkin (15oz.)
- chopped walnuts, optional

Mix the pumpkin, walnuts and spice cake mix powder together. Divide batter (will be thick) into 12 greased muffin cups. Bake at 350 18-22 minutes or until a knife inserted into a muffin comes out clean.
Note: carrot cake mix can be used as well
