I love making chili in the crockpot.

1 lb ground beef, cooked
2 cans beans
2 cans diced tomatoes
1 green pepper
8 oz sliced mushroom
1 cup ketchup
2 T chili powder
1 T cumin.

The PERFECT winter meal.

Southwestern Chicken Tortilla Soup

1 can great northern beans drained
1 can black beans drainer
1 can creamed corn
1 can regular corn drained
1 large can crushed tomatoes
1 can low sodium cream of chicken soup
1 can low sodium chicken stock
1 small can Old El Paso green chilies
1 pkg taco seasoning (I use low sodium)
meat of one rotisserie chicken ( I use only white meat, but can use dark meat too)

Add everything plus several grinds of fresh cracked pepper, and some cumin into slow cooker and cook three hours on low before cooking
Add some fresh chopped cilantro on top of soup before serving

Serve with cheese, crushed tortilla chips, sour cream and salsa.

My favorite - it's super easy!

Pulled Pork Sandwiches.

Put a pork roast, a cup of water, and a half of an onion in rings in the crock pot. Cook all day - about 5 hours until it pulls apart. Pull it apart and take out all the fat. Add 1/2 a bottle of BBQ sauce and cook another hour or until you are ready to eat. Serve on rolls. yum!

My favorite crock pot recipe:

Ingredients

Serves 4
2 pounds boneless, skinless chicken thighs (about 6)
4 garlic cloves, thinly sliced
1/2 cup prepared tomato salsa, plus more for serving (optional)
1 to 2 tablespoons chopped canned chipotle chiles in adobo
1 tablespoon chili powder
Coarse salt and ground pepper
8 hard corn taco shells
Cilantro, shredded cheese, lime wedges, and sour cream, for serving (optional)

Directions

In slow cooker, combine chicken, garlic, salsa, chiles, chili powder, 1 teaspoon salt, and teaspoon pepper. Cover; cook on high, 4 hours (or on low, 8 hours).
Transfer chicken to a serving bowl, and shred, using two forks; moisten with cooking juices. Serve in taco shells, with toppings, if desired.

We don't add carrots because we don't like them. We serve on rice, pasta, or homemade bread. Delicious!

5 – 5-1/2 pounds apples (pick out a variety of sweet apples)
1 cup white sugar
1 cup brown sugar
4 teaspoons cinnamon
1 teaspoon allspice
1 teaspoon pumpkin pie spice
½ teaspoon ginger
½ teaspoon ground cloves
¼ teaspoon salt

Peel, core, and chop the apples. You can puree them in the food processor before cooking, or puree after cooking. If you prefer a chunky apple butter, just finely chop all the apples. Put the apples into your crock. I have a large one and it was almost completely full.

In a separate bowl, combine the sugars, spices, and salt. Pour over the apples and mix well. (Feel free to adjust your spices, but don’t reduce the cinnamon because that helps it turn brown.)

Cover and cook on high 1 hour. Reduce the heat to low and cook for 10 hours, stirring every couple of hours, until the apples are dark brown and thickened.

Uncover and cook on low one more hour. Stir, blend if necessary, then put into sterilized jars and keep in the refrigerator.

You should have 5+ half-pints of apple butter.

How cleaver- you are going to get 18 really good crock pot recipes.

Can you believe that I don't have a good crockpot recipe? I don't even have a crockpot!

I can tell you how to make broth with a crock pot if you like. But I don't think that is what you want.

Split Pea Soup!
Cook Time: 8 hours
Ingredients:
•1 (16 oz.) pkg. dried green split peas, rinsed
•1 meaty hambone, 2 ham hocks, or 2 cups diced ham
•3 carrots, peeled and sliced
•1/2 cup chopped onion
•2 ribs of celery plus leaves, chopped
•1 or 2 cloves of garlic, minced
•1 bay leaf
•1/4 cup fresh parsley, chopped, or 2 teaspoons dried parsley flakes
•1 tbsp. seasoned salt (or to taste)
•1/2 tsp. fresh pepper
•1 1/2 qts. hot water
Preparation:
Layer ingredients in slow cooker in the order given; pour in water. Do not stir ingredients. Cover and cook on HIGH 4 to 5 hours or on low 8 to 10 hours until peas are very soft and ham falls off bone. Remove bones and bay leaf. Mash peas to thicken more, if desired. Serve garnished with croutons. Freezes well.
Serves 8.

Crock-a-Lobstah:

1 can cream-of-shrimp soup
3/4 cup evap. milk
5 oz can lobster, flaked
1 oz can mushrooms, drained/sliced)
2 tbsp dry sherry
2 egg yolks, beaten

Put all of the ingredients except the eggs in your crockpot, stir it up well, stick the cover on it and cook on low for 4 to 6 hrs. In the last half hour, stir in the egg yolks.

Serving suggestion: over rice / noodles

Easy & Delicious Crockpot Buffalo Chicken Dip!

2 Cups or so of Shredded Cooked Chicken
1/4-1/2 Cup of Hot Sauce (To taste)
1 - 16 oz Bottle of Ranch Salad Dressing
1 - 8oz Bag of shredded cheddar cheese

Dump all ingredients in crockpot, stir and cover. 2-3 hours or until cheese has melted and flavors have melded!

Crock Pot Kick-Off Queso:
1 big ol' block of velveeta (diceD)
1 can Campbell's Nacho Cheese Soup
2 cans Rotel
1/2 cup milk
1/2 lb cooked Owen's Country Sausage

Mix it all up - let it cook on low while they're rattling on through the pre-game, then scoop it out on your fave chips for kick-off!
